INGREDIENTS
Sufficient garfish or pilchard fillets
¼ cup of sugar
½ cup of cider vinegar
tspn pickling spice
8 peppercorns
1 onion sliced
2+ cloves of garlic, crushed
4 bayleaves
METHOD
Place fillets, sugar, vinegar, pickling spice and peppercorns in a stainless steel saucepan and simmer for 3 minutes. Remove from heat and remove fish fillets immediately.
Arrange fillets in a shallow glass dish with the rest in layers with them. Cover and place in refrigerator for 24 hours or more.
