My turn to fix dinner tonight.

I really like deep fried fish, usually of the white meet verity, catfish, perch, crappie, white bass and so on. I had some catfish in the freezer that I needed to cook up so that was my choice. I also had fresh trout in the fridge. I have been wanting some fresh trout for dinner. Why not try deep frying the trout along with the catfish? I did. I honestly have not eaten trout that have tasted so good.

I will share my recipe with those that my be interested. The recipe is usually good for two or three fillets and a couple slices of onions separated for onion rings.

1/2 cup flour
1/2 cup pancake mix
1/4 tsp salt
1/8 tsp course black pepper
1tsp sriracha sauce
about 8oz beer    (don't drink any of the beer until you are sure you have the mix right)

In a medium mixing bowl add first four ingrediencies. I like to dry mix these four ingredients before adding the beer. Slowly mix in beer to a consistency a bit thinner than pancake mix, you don't want it too thick, just enough to coat the fish, add the sriracha and mix well. Set the batter aside. When I don't get in a hurry I will often let the batter sit for a couple hours covered. 

Slice fish fillet about 3/4" strips and place them on paper towel to remove extra water.

Add enough oil  (I use olive oil) to about two inches in fryer. Bring oil to 300* and your ready to start frying.

Dip the fish pieces in the batter, let it drip just enough to remove excess, then add to the hot oil, when fish are golden brown they should be done. Repeat with onions.

Your good to go with your favorite condiments.
