Full Version: Perch: all eggs and no meat!

At Rockport monday night, a nice man gave me some perch he didn't want. I've never tried them before but heard they are great eating. I'm still new at filleting fish and couldn't get much meat off them. They are nothing but bones and skin. There were a couple really fat ones I though I could get some meat off of but they were all eggs and no meat.

The man told me he liked to mix the perch eggs with chicken eggs and make an omelet. I might try this next time. Has anyone else tried it?

I remember thinking the same thing when I started catching Perch. As you get more practice you get better at getting more meat off. They are more work for less meat than a trout for example but I think they're worth it because they taste so much better. I love catching trout but I rarely keep and eat them, maybe one a trip because my son likes them but I'll take perch over trout any day. Even my wife who hates fish will eat them. I've never tried the eggs but it would be good to have a use for them.

I agree with fishmagnet when I first started filleting fish including perch I didn't get any meat. You have to practice a lot. Perch are worth it. You may need 25 or 30 to have a decent meal.

The proper knife, and a bit of practice make all the difference in the world. Purchase a sharp tipped filleting knife and work at it and you will be amazed at how much meat you actually get out of perch, even the smaller ones. For me, if I use the wrong knife type, or a very dull one all I get is hamburger (and hypertension) but I might just be a spaz.

I don't know anyone who eats perch eggs, I know people eat caviar so I guess its kinda the same.I wonder if anyone eats trout eggs?

Whenever I teach anyone to fillet fish I tell them that they should expect to mutilate quite a few before the fillets start to look pretty and you can get all of the meat. I really believe that is how it goes. So just keep doing it and one day you will realize that you're pretty good at it. As for eating the perch eggs, oh man that sounds gross to me.

You need a really sharp knife, with a sharp tip on it. I have one made by Rapala that is excellent. Try filleting trout or bass first. They're by far the easiest fish you'll ever do. Work your way up to perch, and eventually catfish. If you've ever filleted a catfish, you'd know that they are the hardest fish to fillet. A perch is relitivly easy to me now. The last time I caught a bunch of them(around 60 or so) I was done in about an hour.
