Ingredients [ul] [li]1 cup diced potatoes
[li]1-1/2 slices bacon
[li]cut into bits
[li]1/4 teaspoon thyme
[li]1/4 cup chopped onion
[li]1 teaspoon salt
[li]Dash of pepper
[li]1 can (No. 1) tomatoes
[li]4 cups milk
[li]2 teaspoons butter
[li]1 teaspoon minced parsley[/li] [li][/li] [li]1lb fresh albacore tuna
[/li][/ul] Directions In a deep skillet, sauté bacon until crisp. Add oil drained from albacore. Stir in thyme and onion and cook until tender. Add potatoes, salt, pepper, and tomatoes, Cover and cook for 15 minutes until potatoes are tender. Add milk, then albacore broken into pieces. Bring to a boil and serve immediately with dabs of butter on top and minced parsley. (Serves 3-4)
