6 8 oz Calico bass fillets
5 tbsp butter
1 ¼ cups finely sliced mushrooms
2 tbsp minced chives
1 ½ fresh bread crumbs
2 tbsp chopped parsley
1 tsp each of basil, chervil and salt
½ tsp cracked black pepper
¾ cup small cooked shrimp
¼ cup heavy cream
Wash and pat dry the fish
Heat 3 tbsp of butter in a skillet,
sauté the mushrooms until all liquid
has evaporated.
Combine the mushrooms with the
remaining ingredients in a mixing
bowl thoroughly. Stuff into the
cavity of the cleaned fish.
Place fish into a small casserole dish,
brush with the remaining butter.
Bake in preheated oven at 375 for
20 minutes.
