Ingredients:

[/size] [ul] [li]4 fresh or frozen steelhead steaks, cut 3/4 to 1 1/2 inch thick [li]1/4 c oil [li]1/4 c soy sauce or wine vinegar [li]3 tbsp parsley [li]2 cloves garlic, minced, or garlic juice [li]pepper [li]lemon wedges [/li][/ul]


Place steelhead in shallow dish. Combine oil, soy sauce, parsley, garlic, and pepper. Pour over salmon. Marinate 30 minutes to 1 hour. Drain, retaining the marinade. Pat excess moisture from fish with paper towels. Grill over medium-hot coals for 6-8 minutes. Turn and grill 6-8 minutes more until salmon flakes easily. Brush occasionally with marinade. Garnish with lemon.
Dip for Fish

[ul] [li]1 C mayonnaise [li]2 tbsp Dijon mustard [li]1 tbsp parsley [li]I diced dill pickle [li]1 tbsp diced onion [li]1 tsp vinegar with 1/2 tsp tarragon [li]a dash of Tabasco and Worchestershire sauce [li]juice of lemon to taste [/li][/ul]
