I'd say just behind the front shoulder. That way you should hit the heart and/or lungs.

Slightly quartering away. That way you get both lungs, and possibly the heart.

I know through the vitals is the cleanest, but in open sage brush with no snow on the ground I'm a fan of right through both front shoulders. If your bullet is heavy enough and strong enough to penetrate the deer drops on the spot. No trailing, no tracking, just boom, DONE.
