Prep: 10 min, Cook: 25 min. [ul] [li]1/2 cup olive oil [li]1 fresh garlic clove, sliced [li]1 lb. squid pieces [li]2 Tbs. fresh parsley [li]2 anchovies, chopped [li]1 small red pepper, chopped [li]1 cup dry white wine [li]1/2 cup clam juice or fish stock[/li][/ul]
Sauté garlic in olive oil until slightly browned, about 1 minute. Add next 4 ingredients. Cook until all liquid evaporates. Add white wine and clam juice, and simmer for 20 minutes. Serve with rice if desired.
