[font "Arial, Helvetica, sans-serif"][size 2]8 large Scallops
1 ½ Tbs Zesty Southwest Oil
1 ½ Tbs Southwest All Purpose Seasoning
2 oz crumbled Feta Cheese
9 oz Linguine
1 piece kale for garnish
2 lemon wedges
½ cup Zesty Garlic Dressing

Coat scallops in oil and spice. Cook under high heat approximately 3-4 minutes. Drop linguine in hot water, then toss with the scallops, dressing and Fetta Cheese. On small round plate, place linguine with scallops on top. Garnish with kale and lemon wedges. Sprinkle with parsley. [/size][/font]
