[size 1]• 1 6-1/2-ounce can minced clams [/size]
[size 1]• Milk [/size]
[size 1]• 1 cup all-purpose flour [/size]
[size 1]• 1/4 cup blue cornmeal [/size]
[size 1]• 2 teaspoons baking powder [/size]
[size 1]• 1/4 teaspoon salt [/size]
[size 1]• 1 beaten egg [/size]
[size 1]• Shortening or cooking oil for deep-fat frying [/size]
[size 1]• Seafood cocktail sauce (optional) [/size]
[size 1]Directions [/size]
[size 1]1. Drain clams, reserving liquid. Add milk to liquid to equal 2/3 cup. Mix flour, cornmeal, baking powder, and salt. Combine the milk mixture, clams, and egg. Stir into the dry ingredients just until moistened. [/size]
[size 1]2. Carefully drop by tablespoon into deep, hot fat (365 degrees F). Fry 5 or 6 fritters at a time about 2 minutes or until golden brown. Serve immediatly with cocktail sauce, if desired. [/size]
