1 Box (2 oz) shredded salt cod
2 Eggs, well beaten
1 tb Dried parsley flakes
1 pk (5 1/2 oz) onion-flavor instant mashed potato, prepared
Crisp bacon, crumbled, or canned, or canned-onion rings
Soak cod in 2 cups cold water about 3 minutes. Drain well, squeezing out excess liquid with back of spoon. Add fish, eggs and parsley to prepared potato. Pour into greased preheated shallow 1 1/2 quart casserole. Top with bacon. Bake in preheated moderate oven (350 degrees F) about 35 minutes. Place piece of foil over top if bacon or onion rings brown too quickly. Makes 6 servings
