1/2 pound ziti, rigatoni or penne
1 pound ricotta
4 tablespoons granulated sugar
1 teaspoon nutmeg
4 eggs, slightly beaten
1 teaspoon cinnamon
1/2 teaspoon salt
Cook pasta al dente.
Mix ricotta with eggs, add remaining ingredients and incorporate them well with cooked pasta. Place in a buttered 2-quart baking dish and bake about 40 minutes at 375 degrees F or until center is dry.
