Could someone please give me a good recipe for Blackened Catfish?
I had some when I was in Texas and it was great.
I have some fillets and want to try them this way.

I have used similar recipes for several different kinds of fish. The main thing to remember is that it is smoky, so it is best done outside or in a well ventilated area.[/#0000ff]

[#0000ff]For catfish, thin fillets work best. Thick ones sometimes don't get well enough done in the middle by the time the outside is blackened.[/#0000ff]

Thanks Pat. I tried the recipe last night. It was good but I still like the corn meal and creole spice fried fish better.
My wife liked it though because it is healthier than fried.
When I try it next time, I'll make the fillets thinner like the recipe suggested. That may make it taste better.
