As many of us know TubeDude is writting a book. If you have followed the board closely you have read parts of it. If you ask questions he is very good to share other parts with you. Everything is well written and easy to follow until it is time to do it. Living in Utah I have had the chance to meet and learn firsthand from Pat.
Watching TubeDude filet a catfish is much more informative then reading and looking at pictures. I put that knowledge to work last night fileting some perch. First cut great. Turn the knife and down the side I went. Still looking like a pro. Hit the tail flipped the filet over and back down nothing but meat. No mess, no fuss, no cleaning fish. Beautifull nice little perch filets. Everything good exept for the bones are still in. No problem there are instructions on the board. Cleaned up my hands and down to the computer I went. Read the great advice and looked at the pictures thought no problem. Murdered those poor filets trying to get those stupid bones out. Decided to make more of them into bait then originally planned.
Pat your writting and pics are great but a how to video would pass along so much more.

Maybe we can get him to do a Fillet class for us, that are a little challenged with the knife. A fiend of mine odes everything like a catfish and just uses a pair of pliers and pulls the skins off and says it works well.

See if he had the video he wouldn't need the pliers anymore as you filet the skin off at the same time. Your left with two filets and everything else still attached together to go in the trash. Head, tail, skin, insides still attached all together and easy to chuck.

But, I also have to propose that no matter how many videos you watch, or how many pictures and narrative you go through, there is a lot of "hands on" learning. [#0000ff]I totally agree with the seminar idea. That is even better than video. Back in the late 70's in Utah, that is what I used to do to help all of the Utah Troutaholics understand how good other species were and how to prepare them. In response to a lot of requests, I began handing out photocopied pages of my recipes. That led to the writing of me (out of print) book on Fetchin' and Fixin' the Fishes of Utah. Aimed at helping people catch and prepare the warm water species.[/#0000ff]

[#0000ff]But, let's get some on the ice or water sessions going. We can get together after catching and I will demo the processes, and point out some of the little things to avoid...or to be sure that you do. I'm guessing that the problem with the final removal of rib cages was that you did not have a small sharp knife. I mean SHARP. With the right knife and the right wrist action, you can whip though a stack of those fillets in no time...and not just "make little ones out of big ones".[/#0000ff]

[#0000ff]For those who live within striking distance of Salt Lake, let me know when you are going fishing and what you "expect" to catch. I will give you my phone number and directions to my house. You can show up with your fish and I will wave my magic blade over them for you. LIMIT...20 perch. Last year some guy showed up with a whole cooler full of perch that were still frozen rock solid from being on the ice. No can do that.[/#0000ff]

[#0000ff]I'm sure we will have some get togethers on the water this coming year, and I always bring my "tools". The only secret, if there is one, is having good knives and a lot of practice. I can not possibly estimate how many fish of how many species I have filleted over the years. I had better be good at turning out good fillets by now. But, I assure you that my first attempts on some fish probably didn't look any better than yours.[/#0000ff]

TubeDude or TubeDad as I call him, taught me the same skills. I passed those skills on to my son and he is a Deckhand on a good Sporty.
Most of the coast was amazed with his faster way of filleting that they hadn't seen before.
When he was asked how he learned to fillet so fast, his simple reply was "The skill was handed down from my Grandpa". Go figure.[cool]
