Will be spending a week in Idaho fishing. 1 day in Salmon area, one in Ketchum area and one in Island Park area.
Anyone from those areas that can recommend good spots. I am catch and release so I will put in the big ones back in for you to catch!

Most of the good spots are not any secret. There is a lot of information on the web about all of those places. It is difficult to give you a very good answer to your question without more details. What type of fishing do you plan on doing?
fly fishing, lures, bait, rivers, lakes, streams, etc.
Any certain species (cutthroat, browns, rainbows, brook, bull trout) or size of fish you are mostly interested in?
How flexable is your schedual? Are you towing a trailer, tent camping, staying with family or staying in hotels?

I am in a car and fishing on foot. I am into flyfishing when there is a hatch on or just using grasshoppers with a dropper nymph. Prefer to sight fish rather than just throw it out there and hope a fish is nearby.

I also carry a spinning rod and enjoy using a rapala for big browns or bows in deep or fast water. Can cover a lot of water that way especially if nothing is rising.

My schedule is as follows. Arrive Salmon, ID mid day, have rest of day and evening to fish.

Get up early to drive to Ketchum. Maybe fish along the way? Get there mid afternoon, sight see a bit( the wife is with me). Late afternnon till dark, fish.

Next day haul out to Island Park. Assume get there late in the day. Fish till dark. Next day fish early leave around noon to Bozeman.

I enjoy any kind of trout. Have enjoyed catching westlope cuts before. Beautiful fish-Also bows give you a great fight.

I have bot a few books on Idaho fishing and so have references. Looking for insight, e.g. where does one fish Henry's Fork? Box car, the ranch or further South where some rivers enter?

e.g. Big wood river is long. Where would be a good wade time for a few hours since I am staying in Hailey but can go anywhere in the area.

Many good places to fish in all of those areas. I'm don't know as much about the Salmon and Hailey area but will share some infomation. The main Salmon River by the town of Salmon doesn't offer very good trout fishing. You would be better off exploring some of the creeks in the area or just going strait to Hailey or Island Park.
Silver Creek, Big Wood and Little Wood as well as tributaries are all good options in the Hailey area. Box Canyon and "the Ranch" are places I would recomend while your in Island Park. There are other places in the Island Park that could also be good but every flyfishermen should be humbled at "the ranch" at least once. I'll send you a PM with more details.

If you will be travelling through Stanley--you mentioned Salmon and Sun Valley, and Stanley is between the two--you can easily catch a limit of rainbows. Fish the Salmon River anywhere from 5 miles on either side of the town. Salmon eggs always produce well in this stretch. You can't miss! P.S.: if this is your first trip to this area, visit Redfish and Stanley lakes for dramatically beautiful views.

Kodiak is right. Alturas and Redfish lakes are breath-taking and very fun to fish. I believe redfish has kokes or some kind of ll salmon in it. There are also bull trout in the rivers up there. Or used to be anyway.

I'd point you to my recent report on fishing Alturas and Redfish, but I might further incriminate myself!

What I CAN say - is carefully read the regulations about Bull trout, and make sure you follow them. But I can also confirm - there are some NICE bull trout up there. This beasty was 4-5 pounds.

I've been told (camp host) that the rivers around Sun Valley - Ketchum are stocked especially well - due to all the MONEY around there.
There were lots of catchable rainbows at Alturas Inlet. Plus about 1/3 of the hike-able lakes are stocked. There are some nice cutthroats and brookies to be found.

Salmon eggs seemed to be choice overall.

Both Alturas and Redfish hold Kokes - but mostly small ones from what I understand. I didn't find any, but I was bank-tangling. Riggers are the way to go for kokes for sure.

Take a minute while you are in Sun Valley and go into the big fly shops there -- ie Silver Creek or Lost River Outfitters. They are very helpful on where to fish on the river and what to use etc.

Same for the Island Park - Henry's Fork Area.

The local shops know what is workingand will usually help you out.

coyote dont put anythought into them jumping on you for taking the fish out to get a picture... hell i have fished up there with a fish and game officer who was using rapalas targeting bulltrout, and yes he was also taking pictures of them out of the water!
