Well -- this is the first time -I've taken part in a forum --- I hope I do this right [angelic] --- Does anyone enjoy freshwater Northerns ????

I really enjoy cast fishing on the big lakes in northern Minnesota, and catching good sized northern pike. --- Although I am gaining experience "nabbing" catfish in east central Missouri. I just need to get past the "stink-bait" issue hahahahaha.

Unlike, (but a very few), I enjoy eating a nice scaled-fillet of northern. What I'm interested in learning -- is, how to clean them -- The "COMPLETELY boneless" way.
Don't mis-understand me tho. the "regular" fillet with the "Y-Bones" doesn't bother me in the least [Wink]!!! It is allllllll GOOD !!!

Pike have what is called a "Y" bone, for those who may not know what a Y bone is, think of it like a wish bone that is neadle thin. and extends from the front of the rib cage to the back of the rib cage in adittion to the rib cage.

To get a boneless Pike fillet, you debone it after it is cooked.[shocked]

I dont scale pike, nor do I fillet them. you can, but it dosnt realy matter, but if you do you may make it harder to pull the bone after it is cooked... If you are trying to do something fancy you may want to pull it from the oven and pull the bone before you finishe it off.

much like trout, the skin and bone will fall off of the flesh if not over cooked... Be carefull about under cooking as well, you can get worms of differnt species not limited to tape worms or others that can kill.... use a meat thermometer...

I take pike and cut them in to lengths either serving size or platter size depending on who I want to impress.

Pike can be gilled, gullied and baked with thier heads on or off. The tail area may offer the only section that may be "Y" boneless fillet.

I generaly when prepairing pike is cut the head off, make a slice along the back bone all the way down to the end of the tail. I put a few dabs of real butter in the slit and bake.

When done baking the fillet to 145 degrees it will ufold off the rib cage exposing the the ends of the "Y" bone, you can then grab each bone and pull them out one by one... do not over cook them or the tips of the "Y" bone will break off... serve emeadiatly, Fresh Pike from clean water dosnt need much seasoning, after baking I barely add a sprinkle of salt... maybe a little lemon or cocktail or tarter sause on the side...

If you want to move your presentatioin from the baking sheet to a platter, gently pick up the foil and slide it over on to the platter before unfolding the fillet off the rib cage and serving to your guest, most people who enjoy pike know that pulling the "Y" bone is vary common...

*** dont feed pike to the kids unless it is a clean section from the tail...
