Flaming Gorge has captured a lot of attention this icefishing season, and a lot of the reason is the high catch rates we've seen for burbot. Most everyone knows how they've exploded in the reservoir, and there will be some impacts to the fishery. There's no question, it's crucial to remove them from the lake, but what do you do with all those fillets?
Aside from anglers, burbot have drawn interest from members of the cooking world. The [#ff0000]International Sportmen's Expo[/#ff0000] [#ff0000](ISE)[/#ff0000] runs March 13-16th, at the South Towne Expo Center in Sandy. A component to that is the [#ff0000]Frostibite Challenge- Barbeque Cookoff[/#ff0000] on March 15th from 4:30-7:30pm. Contestants will cook choice dishes for Flat Iron Steaks, Beef Ribs, and believe it or not Flaming Gorge Burbot!
To kick-off the ISE and the Frostbite Challenge, the competition's spokesperson, "T" from the Utah Barbeque Assoc. and Q4U Barbeque restaurant in Salt Lake City will also cook a burbot dish for KUTV Channel 2 News at noon on March 13th. As a restaurant owner and a devoted outdoor cooking enthusiast, "T" will surely have a fantastic burbot recipe to showcase and it will be fun to watch him in the kitchen.
I thought both of those items, may interest several of you that have followed burbot or which will attend the ISE. You've gotta appreciate those involved for taking the time to promote the table quality of burbot. For more info, check out the link to Backcountry Radio at:
