[#0000ff]Ramaki is basically an oriental recipe for wrapping bacon around other meats...like chicken livers or chicken breasts. A while back, I saw a ramaki recipe on TV while watching North To Alaska...using salmon. I thunk to myself..."Why not catfish?"[/#0000ff]

[#0000ff]I am attaching the recipe and some pics. I altered a recipe I found for making chicken breast ramaki and this one works great for catfish. I suspect you could use it with almost any fish, but since catfish are so firm and oily, it lends itself especially well to them.[/#0000ff]

[#0000ff]I cooked mine over a flame broiler. Took just about six minutes per side to get the bacon a bit charred and the fish thoroughly cooked. I used one of those two part fish baskets that let you secure small fillets inside so that you don't have to turn them on a grill or griddle. Worked great.[/#0000ff]

[#0000ff]You can panfry them, oven bake them or cook them just about any old way you want. In the recipe, I have made a couple of ingredient change suggestions too. I used beer...and the alcohol disappears during cooking. But, you can use flavorful fruit juices instead...like pineapple or apple juice. Citrus juice makes it a bit tart.[/#0000ff]
