Hit Utah lake out from the pumphouse this mourning. Caught some nice cats on white bass cut meat. What a blast! Hey Tube Dude care to share your kitty jerky recipe?

[#0000ff]I smoke/dry my kitties a couple of ways. One is to just prepare the fillets and cut them into pieces. Put them on a smoker rack and sprinkle them with sea salt, white sugar and brown sugar. Let them sit at room temperature for a couple of hours. Make sure they are on newspaper and/or paper towels. The salt and suger suck moisture out of the fish and it drips. When there is a glaze on top of the fish, sprinkle with your choice of pepper and other seasonings. Smoke at 160 - 180, using hickory or your other favorite chips. I usually let em cook/dry for 8-10 hours...replacing the burned chips about every two hours. Check them at the five hour mark and rotate the trays to insure even cooking. Leave them in the smoker with no additional smoke until they are as dry as you want them. You can help that along by putting them on a foil covered baking dish and finish drying them in the oven.[/#0000ff]

[#0000ff]My other method is to heavily salt, sugar and brown sugar the fillets, on both sides, and let them sit n a sealed plastic container in the refrigerator overnight. The next morning the container will be full of brine solution, pulled out of the fillets by the salt and sugar. Rinse thoroughly a couple of times, and put the pieces on your smoker rack. Let sit for at least an hour, then season and smoke.[/#0000ff]

you soak them in lighter fluid so they are easier keep lit when you are smoking them, Right?????
