give fiddler crabs a shot, for sheepshead.
Old-timers will tell you that in order to hook a sheepie, you need to set the hook "just before he breathes on your bait."

Any small fish caught from the rocks, like small blues, pinfish, croaker, or whiting can be used as turnaround bait might hook into some big blues or shark. I've used a balloon rig used with good success, gets bait way out there if the wind & current is going away from jetty.

Live menhaden and mullet are excellent baits for this time of year. There's a good chance you'll hook a large bull drum or trout.
The fiddlers are also a good idea for the sheepshead.
