I have been doing crawfish boils for our church group here in Utah for 20 years. I don't cook them any other way but your basic boil is as follows

I use the large turkey fryers on the propane stand. they will generally hold 10 lbs of crawfish. We usually just boil the tails and the larger claws. (utah's dont suck the heads like they do in the south)

I use 1 bag of the Zatarians Crab boil. (The powder not the spice bag. The spice bag does absoutly nothing?

1 bottle of the zattarians crab boil oil.

6 lemons quartered and squeezed in to the pot.

and you can add Cayan if you want a more kick but not really necessary.

Just bring the pot to a boil, dump in the crawfish, bring back to almost a boil but not quit then turn off the heat and let them soak for 30 min. longer if you want them to soak in more spices for a hotter crawdad.

In Lousianna they cook them this way in big 50 lb trailer mounted boil pots. them just put some plastic on the picknic table, dump the pot and sit around the table and eat dads and drink beer.

Where do you get the powder? I've always used the spice bag but I imagine the powder is better.
