So how thick is the ice in most lakes with the fold wether being here..... Guessing it thick because just the other day up at my house it was 10f and wind was blowing at least 20mph so that makes it almost below zero so let's here em reports.

If it was 10˚F, it was 10˚F. If the wind blew 100 mph it would still be 10˚F. Wind chill does not make it colder. It makes it feel colder, and harder to keep warm. It will cause anything warmer than the surrounding air mass to cool to the same temperature as the air mass quicker than it would have without the wind.
Evaporation on the other hand will cause a reduction in temperature.

Most of the lakes have at least 6" of ice. on many lakes it is 10" or 12" . Some low level lakes Utah Lake and Grantsville plus numerous local ponds may have less. Do you have a specific area you were interested in? Lakes in Utah might be too general of a question for a good answer. In general all the lakes have decent ice right now.

deer creek was 10 inches of ice this morning, I dont think it usually gets that thick, this has been an especially old winter so I think that contributed to it this year. (Al Gore can stuff it [cool]) that means most of the higher lakes are probably at least 10 inches if not more by now. I bet strawberry is pushing 16 as it gets very cold up there. One way to know-- get out there and fish![
