[cool] Hey there icefool,
Dove can be prepared much like cornish game hen or any other small fowl. Just in case I have a good recipie you may want to try.
4 Dove or similar small fowl
8 tbls margarine
3 green onions(incl stalks)
1 clove of garlic(more if you desire)
1 tbls course black pepper
1/4 tsp ground cumin
1/2 tsp salt
Remove feathers, head and clean doves just like you normally would.
set them in a pot of boiling water for no more than 3 minutes.
In a blender or food processor, combine margarine, green onion, garlic and cumin.
lay the doves on a baking dish that can be covered,( whole doves, breast side up)
place 1/4 of the butter mix inside the cavity of each dove.
cover the dish and bake in a preheated oven at 350deg for 35 min.
after 35 minutes turn doves over and sprinkle the salt and pepper over the doves and cook uncovered for 20 more minutes.
bast the doves 1/2 way through the second cooking cycle.
remove from oven and garnish with parsley or baby spring dill.

There are a bajillion "old family recipes" for cooking doves. As you already know, you need a bunch to feed a bunch. There's more excitement than meat when it comes to hunting those rascals.
You will probably get lots of input. I kinda just put them in a pan and cover them with soup...cream of onion, celery, mushroom or whatever...and bake at 300 for about an hour. They shouldn't be overcooked.
You can coat them and fry them too, but it dries them out sometimes. Here is a link to some recipes from Cabelas that give not only some dove recipes but some for other game birds too. A lot of the recipes can be interchanged.

DOVE TENDERS
10 Dove breasts, skin removed
2 eggs
1/4 c. heavy or whipping cream
1-1/2 c. plain bread crumbs
2 packets Goya Sazon
2 tbls. garlic and herb seasoning (salt free made by schilling)
Salt & Pepper to taste (if necessary)
Vegetable Oil
Fry pan
In a small bowl, beat the eggs and heavy cream together until the
mixture is smooth. Add the dove breast and allow them to soak while you
prepare the rest of the recipe. In a shallow bowl combine the bread crumbs, Goya Sazon, and garlic and herb seasoning and mix well, set aside. Pour enough oil into the fry pan to create a 1/4 to 1/2 inch thick layer in the pan. Place over medium heat until hot. In the meantime, start dipping the breasts in the bread crumb mixture and coat well. When the oil begins to swirl in the pan it is ready. Fry the breasts about 2-3 minutes each side. The breasts will be medium to medium-rare and probably a little bloody. Cook them any longer and they will come out dry and chewy. Enjoy!!
