We throw a bag of Zatarans crab boil in the water, it's found in most grocery stores. Adds a nice flavor.

We tear the tails right off them at the lake making sure the vienis out of the tail which is really easy I cut the tail down the middle after so the meat pops out when its cooked we put in old bay seasoning in boiling water then dip it in real butter its really good or you can boil them in wine to

Some folks like to give them a salt-water purge first. Get's em to puke their little daddy-guts out. Rinse - then boil. The crawdad boil mixes add lots of flavor. Some can get pretty spicy. Boil up some taters, onions, carrots first - then add the dads at the end.

found them at the damn west of the pumps on the east side of the damn there is some water coming out and they are piled up thick as thieves that was only one dip of net. I may run down again monyanna again this batch i must have not cooked well enough or right they did not taste as good as i remember from my mission

We twist and pull out that middle tail fin, that removes the vein/cleans them. Then we rinse in cold water. Have a big pot of water boiling, well salted. I also add a lemon, cut in half, to the water. Throw 'em in and boil 'til they're all red. We just keep good sized ones, so the claws are big enough to eat too. Most people we know eat just the claws and tail. Dip 'em in butter and enjoy with more fresh squeezed lemon.

Middle fin on tail pinch with fingers give a little twist and pull.. this will pull out the nasty stuff. Dont cut them open at all just pull out the center fin on the tail.. befor doing this take about a cup of tablr salt dump in large cooler fill with cold water mix then dump still alive craws in.. this is called purging.. they will expell everything.. then clean them with nice cool water remove dead craws do not cook craws that are and have been dead for more than 5 min throw them away.. start pulling middle fin. Put in boiling water with a cajun mix add in half lemons potatoes carrots ect.. put down a layer of news paper on table when the craws are done dump the whole strained mix out on the news paper.. and there you have it southern craws.

Lots of ways of cooking, should keep you busy all winter. Do pull the vein out as has been mentioned, makes a big difference in taste.

As mentioned, cleaning is the key.
I have never purged them, tho I've heard of it. You'd have to be ready to purge them lake side, but that can't be hard, just carry a bucket and some salt.
Since you can't take them anywhere alive, I clean them on the spot. Twist off the whole tail and the claws, then snap them down on the ground hard for a quick execution.
But if you cooked any with the veins still in the tails, or ate them like that, the taste might be off.
I melt butter and add a tiny bit of garlic salt. Lots of good ways, but simple should get you by.
