Ditch the grill.
Whip up an egg or two, depending on the size of the fillets.
Dip the fillets in that.
Roll in grated Parmesan cheese.
Fry in oil.

That sounds tasty. We do almost the same recipe for salmon. We do half mayo, half Parmesan cheese into a paste, spread onto the salmon fillet and crumble ritz crackers over it. It's amazing!

My favorite way of using my halibut is to use half and half breadcrumbs and coconut and dip the fillets in cream or milk or even egg wash and roll it in the crumb/coconut mixture. Put it on a well oiled cookie sheet and spray the fillets right before putting them in the oven with more cooking spray. bake at 425 for 20 minutes. healthier and very delicious!

Halibut on the grill is fine. My favorite is deep fried as part of fish and chips. Pan fried lightly season for fish tacos is also amazing. Can't go wrong with bread crumbs either.
If you have some left when the weather cools back down it also makes a good chowder. Here's the recipe I like; http://allrecipes.com/Recipe/Hearty-Halibut-Chowder/

If grilling is how you like to cook it. Wrap in tin foil spread maynaise on top of the fish slice of butter and season. The mayo makes the fish super most
