I've been trying my luck recently below AF for sturgeon - but I'm yet to land a fish. I'm very new to this whole kind of fishing, so I've been having trouble getting a solid hook set. When do you typically set?

Use A Circle hook And Don't Set.

Exactly circle hooks on sturgeon should be mandatory law in Idaho IMO. Use a 4/0-6/0 size hook in your favorite brand - I prefer Gamakatsu or Owner. In my very limited experience I see the bite, slowly pull the rod out of the holder, wait until I can feel the fish, the raise the rod up a foot or so and reel into the fish. Almost like setting the hook on a dropshot for bass.

All this really does is pick the weight up off the bottom pulls the hook into the corner of the fishes mouth or it catches them in the lower lip. Also squawfish, catfish, carp, and other bait stealers love to eat sturgeon bait as well. It could be another reason your missing fish.

7/0 gamakatsu octopus barbless and make sure to keep them sharp. Try to set early, you don't want them to swallow it. Try night crawler with a pegged corky in the summer, don't leave your pole unattended. Makes your butt pucker when your pole flys away. Lol
