It's been many moons since I have been here. Hi all !

I have never cooked Cisco.

My Fiancee was given a bunch of freshly caught Cisco. I was hoping someone could give me some ideas on how to cook them?

They are just gutted.

1 cut off heads
2 take a butter knife and run it up each side to remove a majority of the scales.
3 rinse fish thoroughly
4 prepare breading mixture. Equal parts of pancake mix, flour, and cornmeal. Season this with seasoned salt and pepper
5 drop wet fish carcasses in breading mixture and coat
6 fry fish in a pan of oil and cook until crispy
7 eat the whole thing. Believe it or not, the tail is one of the best things.

Been doing it for years and they are great!~
