Beaver Dam Wash is very remote and small but rainbows and a rare cutt do come down in winter and spring with higher flows. Slaughter Creek is a tiny trib of Beaver Dam Wash and I've never seen game fish in it.
here's a descent map of Utah fishing spots does show the SW corner as well, http://utahoutdoors.com/maps/Utahmap.GIF
Don't forget Lee's Ferry in AZ
It's a desert- so some times your better off just shooting or running over things in the Mohave like the locals if you're not into bass.

I live in St. George and if you are talking about Fly Fishing for Trout there is as previously stated some decent float tube waters in the area....but not much in the way of streams to trout fish. Stillwater fishing at Enterprise and Kolob can be very good at times. Minersville reservior can be good fishing from shore as well as floated...especially after ice off. I usually run about 2 1/2 hours north to fish some decent trout streams. I also have been up to kolob and done very well shortly after ice off.
