There is a motor sports place in centerville on the frontage road that I believe rents them.

Search KSL in the rental section. There are a bunch if you are trying to go to Utah Lake.

There's a place that rents all kinds of powered and nonpowered watercraft at Rockport Reservoir, for use on Rockport. You could paddle around one of the little bays.

Make sure to rent the same kind you are considering buying. Hull styles vary for different purposes and even between brands. I have a Coleman canoe that is fairly stable. I took it on a float trip with a buddy who had borrowed a Pelican canoe 7-8 years ago. On flat, moving water, he and his son rolled 3 times within 100 yards of the launch. I could rock mine back and forth without issue.
Like a car, try to test drive the one you would want to buy.
