This is a very cool video done by Alaska Fish and Game. I did not knoe the fish had a belly fillet. The meat on them looks pretty good to me. I need to get up to FG and do my part at removing some of these snake like creatures.

I don't bother carefully cutting the skin on the belly like he did. A good set of skinning pliars, 2/3rds circumcision, and it all comes off in one clean sock. It's not nearly as much trouble as he make it look to be.
I also don't bother to remove the fins. It might make it easier in some ways, but just an unnecessary step to me.
I am also a bit of snob when I dress game. Hate hairs on my elk meat, or slime on my fish. No way will I fillet the meat on the slime left behind on the cutting board. They are some slimy smelly buggers, and I don't want that in my food. I pull one from the cooler/sink, circumcise it, pull the skin off, and set the body on a cutting board with the slimy head hanging off the end. Nice clean meat that doesn't need washing.

That slime will taint the meat for sure, learned that the hard way. I'm not sure what that guy used to clean the slim off before he filleted it but I prefer to fillet them when they are frozen solid. I do like soaking the fillets in salt water, to get the blood out.

I use too many paper towels and two or even three cutting boards even for trout. Stage processing so no meat ever touches slime. Not OCD, but getting close. lol

I am not a fan of the slime off of trout. I will use a few paper towels and then wash them again. I have heard that the Burbot are just as slimey as all get out. The one he was working with in the video did not look very slimey to me. I just figured the cleaned it up real well before making the video.
