Captain Ben's Crispy Cod


Fish:

1 lb. Pacific cod fillets, cut into bite - size pieces

2/3 cup cornstarch

1/3 cup flour

1 tsp. vinegar

Water

1 T. baking powder

Oil

Marinade:

2 T. soy sauce

1 T. chopped ginger

1/8 tsp. salt

1/8 tsp. pepper

Place cod pieces in bowl. Combine marinade ingredients; pour over cod. Stir. Set aside for 30 minutes, stirring and turning fish occasionally. Combine cornstarch, flour and vinegar. Add enough water to make medium - thick pancake batter. Add baking powder; stir. Dip marinated cod chunks in batter. Heat oil in deep fryer or skillet. Fry a few pieces at a time until golden brown.
