Hey y'all,
I made it over to Oneida narrows for a couple hours yesterday evening to try for some chunky rainbows and only got 2, but I did surprise myself with 6 smallmouth bass caught on gulp minnows on a jighead. I kept 4 of the bass for a supper and turned everything else back.
I didn't get any pics because I was being selfish and just worried about fishing, but this evening when I was making the bass for dinner I snapped pics of the recipe in progress.
I don't know about the rest of you, but I get bored with the same old ways of making fish....fried, BBQ, etc.... so with 8 fillets and some bacon in the fridge i thought I'd go without a recipe and try my own thing.
I folded the fillets in half lengthwise to make them more consistent in thickness and then seasoned them with a little lemon pepper, Creole seasoning, and then wrapped them in bacon. Just start at one end and wrap along trying to use the bacon to keep a tight cylindrical shape. Use more than one piece of bacon if needed. Add black pepper after you wrap them and then, in an oven safe frying pan, brown a little and then put in a 450* oven for 15 minutes or so until bacon browns up nicely. Take out and add a drizzle of teriyaki sauce and serve with favorite side dish.
