Full Version: Oneida Narrows/new recipe

Hey y'all,

I made it over to Oneida narrows for a couple hours yesterday evening to try for some chunky rainbows and only got 2, but I did surprise myself with 6 smallmouth bass caught on gulp minnows on a jighead. I kept 4 of the bass for a supper and turned everything else back.

I didn't get any pics because I was being selfish and just worried about fishing, but this evening when I was making the bass for dinner I snapped pics of the recipe in progress.

I don't know about the rest of you, but I get bored with the same old ways of making fish....fried, BBQ, etc.... so with 8 fillets and some bacon in the fridge i thought I'd go without a recipe and try my own thing.

I folded the fillets in half lengthwise to make them more consistent in thickness and then seasoned them with a little lemon pepper, Creole seasoning, and then wrapped them in bacon. Just start at one end and wrap along trying to use the bacon to keep a tight cylindrical shape. Use more than one piece of bacon if needed. Add black pepper after you wrap them and then, in an oven safe frying pan, brown a little and then put in a 450* oven for 15 minutes or so until bacon browns up nicely. Take out and add a drizzle of teriyaki sauce and serve with favorite side dish.

You never know with that section of river. I was up there in June one evening fishing a small swimbait for smallmouth and I kept catching rainbows [crazy] I also got this surprise.

Oh man!!!!!! My mouth is watering! I am going to try that out!

I have decided that smb are right there with perch and walleye for the top eating fish in Utah. Wiper and channel cats caught in the spring colder water are also great.

Then for the smoked fish I will go with
1. Kokanee
2. Splake
3. Tiger

I have very fond memories of catching my largest ever walleye there in the 90's.
Any walleye left?

Ya, plenty of walleye left there, though I've never caught one over 20" there.

I caught a 30" out of the reservoir about three years ago. I never have caught any in the river though.

Cool! I've actually never caught one out of the reservoir, but I've caught a lot on the river below. I'm still trying for the reservoir walleyes though!

Ha, it's funny how that goes. I've caught lots in the reservoir while smallmouth fishing but never any in the river. Most have been on the small side, but I've had some in the low 20s too. That catfish really threw me for a loop though as I had no idea there were any down in the canyon there. It thumped that swimbait pretty hard [Smile]
