What have you all been doing with all the roe in the perch?

I cured some and they are some of the best caviar i've eaten in a long time.

Curing and salting will also make for good catfish bait at Willard.

I have tossed mine in the trash. If I may ask, how do you "cure" it properly?

When I was still in college we used to take the perch egg sacks and just bread them like you would a fillet and fry them in oil. I tasted a lot like the the meat, just a little mushier (is that a word?). Anyways, now I only eat flesh, not organs or other body parts. But the eggs are edible. I'm living proof.

I use borax to cure roe. Don't know what it does exactly, but it works real well for trout eggs. Works pretty good for perch eggs, but seems to take longer.

Borax does work great!

Do not use Borax if you want to eat them!

I line the bottem of a tupperware dish with 1 cup sea salt, 1/2 cup brown sugar, some chives, pepper and lemon zest. I place the sacks on top then add 1/2 cup of cold water. Cover and refrigerate for 24 hours. Then I turn them (the egg sacks) over and cure for another 24 hours. When you take them out they are a little firmer than when you start. Then I rinse and dry them off.

I like them with cream cheese on crackers. I also slice them into medalions and fry them in bacon grease for breakfast. They fry well even if they havent been cured.

I generally just cure the roe I get from the trout I catch. It is illegal to 'harvest' roe from trout you release. I haven't cured much perch roe.

To cure the roe I get an old cake pan and put about 1/2 inch of borax in the bottom. Then I cut/separate the roe into chunks the size I want, and place it on the borax. Then I cover it with borax and place in the fridge to cure. I let it sit till it dries to the consistency that it will stay on a treble hook. The I take it out and put it in a ziplock or airtight plastic container. Leave the borax that clings on. It won't hurt anything, and washes right off when you fish with it. Roe will keep for at least six months in the fridge. Up to a year in the freezer. Don't freeze it before you cure it or it will just turn to mush. I fish it on a treble. Incredible scent the fish love. Catch the carp right before they spawn. Pretty yellow roe. Fish can't resist roe! Hope this helps!

Thanks Chester, I had no idea how to use it as bait, I have heard of people wrapping slamon roe in pieces of pantyhose and tying it too a treble but that sounded like a heck of alot of work and I didnt know if i was supposed to buy sheer or extra sheer nylons, because of those pesky runs, and I was just so Confused on what color to buy them in flesh or dark. but really thanks for the info it will help. but my dog may get upset with me, saving all the roe for myself. That sounds like a good recipe for caviar. Way to go. would you like to post that one on the Recipe board??? There is a thread for that to help you get started. Just simply reply to it and put the name of your recipe in the subject line. Bon Apetit.
