Salmon Fillets with Sweet and Sour Onions - tubeN2 - 02-13-2004 4to6 salmon fillets (depending on the number you are serving) 1/4 cup butter 2 medium white onions, thinly sliced 2 table spoons water or chicken broth 1/2 cup brown sugar 1/2 cup vinegar 2 tablespoons chopped almonds 1/2 teaspoon grated lemon rind 1. Broil salmon on both sides in a lightly oiled pan (or grill on a clean, oiled grill) until tender. Serve with sweet and sour onions (see below). 2. Melt butter in a medium frying pan, add onions and brown. Add water or chicken broth, cover and cook on low for about 15 minutes. Stir occasionally. When onions are soft, add sugar and vinegar. Simmer another 10 to 15 minutes until liquid has thickened. Stir in rind. Serve on fish with almonds sprinkled on top. [signature] |
