[size 1]1 clove garlic
Salt and pepper to taste
4 tablespoons lemon juice
1 can (28 ounces) Allens Cut Italian Green Beans, drained
1 small onion, finely chopped
2 tablespoons finely chopped fresh parsley
4 tablespoons virgin olive oil
1/2 cup halved cherry tomatoes
[/size] [ol] [li]Mash garlic and salt. [li]Add lemon juice and mix well. [li]Add remaining ingredients, except tomatoes, and toss. [li]Refrigerate at least one hour before serving. [li]Garnish with cherry tomatoes. [/li][/ol]
Tasty tip: For more tartness use an additional 2 tablespoons lemon juice and 2 tablespoons olive oil.
