Cranberry, Orange and Apricot Salsa - tubeN2 - 10-06-2004

/4 cup fresh cranberries, coarsely chopped [li]2 Tbs. honey [li]1-1/2 tsp. fresh lime juice [li]1/4 small red onion, minced [li]1/2 jalapeƱo pepper, seeded and minced (wear rubber gloves) [li]1/2 large orange, peeled, segmented, seeded and cut into 1/2 inch chunks [li]2 Tbs. dried apricots, chopped [li]1 Tbs. plus 1 tsp. fresh cilantro, minced[/li]
Combine all ingredients in a mixing bowl. Chill overnight. Serve over meat.
