2 pounds Fat-free raccoon meat; ground
1/2 cup Cracker crumbs
1/2 cup Ground onion
1 1/3 teaspoons Salt
1/2 teaspoon Freshly-ground black pepper
2 Eggs; lightly beaten
1/4 teaspoon Ground thyme
1 cup Evaporated milk

Mix all together well and form into a loaf; place in a greased loaf pan. Set loaf pan in another pan of hot water, and bake at 350 degrees for 1 3/4 hours. This recipe yields 6 to 8 servings.
