Baked Halibut With Cheese Sauce - tubeN2 - 02-10-2005

2 Halibut Fillets (1 1/2 lbs.)
1/2 tsp. butter or margarine
1/4 lb. grated Cheddar cheese
1 egg, well beaten
1 1/2 tsp. salt, divided
1/4 tsp. pepper, divided
1/4 tsp. dry mustard
1 cup milk
4 sprigs parsley

Put Halibut Fillets in greased baking pan. Sprinkle with 1 teaspoon of the salt, 1/8 teaspoon pepper, and 1/2 teaspoon melted butter. Bake in very hot 450 degree oven until fish can be flaked with a fork. Mix grated cheese, beaten egg, dry mustard, 1/2 teaspoon salt, and 1/8 teaspoon pepper. Scald milk and slowly stir it into cheese mixture. Then cook this slowly in double boiler until smooth, thick sauce is made. Put fish on warm platter, pour on cheese sauce and garnish with parsley. Serve immediately.
