Walleye Recipes - richmac1 - 04-15-2011 I finally got my first walleye out of UL this morning, now I just need a good fish taco recipe. Thanks [signature] Re: [richmac1] Walleye Recipes - Got_Bait - 04-15-2011 Don't hide up the flavor of that walleye in a fish taco! Beer battered and deep fried in vegetable oil is the way to go!! Then dip it in some homemade tartar sauce. 1/2 cup cornstarch 1/2 cup flour 3-4 Tbsp sugar add beer to desired consistency Perch, bluegill, or crappie make great fish taco's though. Oil your pan with olive oil then fry your fillets with some chili powder, lime juice and regular salt or garlic salt to desired saltiness. Throw it in a corn tortilla with your favorite condiments. [] Fillet, dry with paper towel, dust with flour seasoned with cabin spice or just salt and pepper. Lightly fry in veg oil. Put two corn tortillas sandwhiched together on the griddle or pan, flip. Put fresh cole slaw on the tortilla, little cholula, the fish (after draining it on paper towel) and a squeeze from a wedge of lemon or lime. sometimes I like to use a mango pure'e too. Cut up two jalepeno or serano peppers -remove the seeds if you don't like too much heat. Throw them in a dry fry pan for a minute moving them around. Slice up a ripe mango and throw it all in a food processor. Paste a thin layer on the tortillas before the slaw...... yeah buddy! Sprinkle liberally on the fillets and mix and rub it in some. Next dip into some flour and into the pan it goes. Here's a pic of the results. Delicious with any fish from perch to trout.
