Marlin
Marlin fishing very slow this week, not many sightings.

Dorado
Good dorado fishing this week, good sizes ranging from 15 pounds up to 35 pounds, caught from the Lighthouse to Los Arcos using lures, ballyhoo, and live bait.

Tuna
Very slow this week and very hard to find them.

Wahoo
No reports of wahoo catches this week.

Rooster
No reports of Rooster catches this week.

Inshore
A few skipjacks and dorado.

Weather:
The forecast for Cabo San Lucas in the coming week is predicting the average daytime maximum temperature will be around 36°C, with a high for the week of 37°C expected on the afternoon of Monday 25th. The average minimum temperature will be 25°C, dipping to its lowest on the morning of Thursday 28th at 24°C. Expect the week ahead to remain predominantly dry. On the whole winds are likely to be moderate.

Citrus-Glazed Dorado with Mango Avocado Salsa

Embark on a culinary journey with the tantalizing flavors of Citrus-Glazed Dorado, accompanied by a zesty Mango Avocado Salsa that will transport your taste buds to a sunny beachside paradise.

Ingredients:

4 Dorado fillets
2 tablespoons olive oil
Zest and juice of 2 oranges
Zest and juice of 1 lime
2 cloves garlic, minced
2 tablespoons honey
Salt and pepper to taste

For the Mango Avocado Salsa:
1 ripe mango, diced
1 ripe avocado, diced
1/4 red onion, finely chopped
1/2 red bell pepper, diced
1/2 cup cherry tomatoes, halved
1/4 cup fresh cilantro, chopped
Juice of 1 lemon
Salt and pepper to taste

INSTRUCTIONS:

Citrus-Glazed Dorado:

Step 1:
Preheat your grill to medium-high heat.

Step 2:
In a small bowl, whisk together the olive oil, orange zest, lime zest, orange juice, lime juice, minced garlic, honey, salt, and pepper to create the citrus glaze.

Step 3:
Brush the Dorado fillets generously with the citrus glaze on both sides.

Step 4:
Place the glazed Dorado fillets on the grill and cook for about 4-5 minutes on each side or until the fish is cooked through and has a beautiful citrus glaze.

Mango Avocado Salsa:

Step 1:
In a medium bowl, combine the diced mango, diced avocado, finely chopped red onion, diced red bell pepper, halved cherry tomatoes, and fresh cilantro.

Step 2:
Squeeze the lemon juice over the salsa and gently toss to combine.

Step 3:
Season the salsa with salt and pepper to taste. Adjust the seasoning according to your preference.

Serving:
Serve the Citrus-Glazed Dorado fillets with a generous scoop of the vibrant Mango Avocado Salsa. The succulent fish infused with citrus flavors pairs harmoniously with the zesty and refreshing salsa, creating a culinary masterpiece that will transport you to a tropical paradise.

BEWARE: Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs. You don't want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license. These are just a few things to consider when booking your charter boat. We will be talking more about this in the next weeks fishing report.
