I think I am going to head up to East Canyon this weekend and I have never been there before. Where on the lake is a good spot to launch a kick boat? Is the main boat ramp at the state park the best place or is there other spots around the lake that I could launch with out having to pack my kick boat too far.

Near the ramp is probably the best. It's a fairly long and steep walk down and back up, but it's less so than launching from anywhere else. EC is only about 65% full.
I launched my kayak from the ramp last week and fished Rocky Hollow - the long draw between the ramp and the dam. No luck, but at least it's a No Wake area, which you'll appreciate after about 11 am when the power squadron shows up.
Google Earth shows toilets and parking at the Taylor Hollow/Hwy 65 bridge, on the east side of the lake. That might be good access for you, also.
