Marlin
Very few marlin fishing, we released a 90Lb striped marlin yesterday.

Dorado
Very slow, we caught a 20Lb Dorado on Tuesday.

Inshore
Good inshore fishing for sierras, white bonito and skipjacks,
Very good bottom fishing.

We have and do a few tournaments each year and can cater to fisherman who might be interested in tournament fishing. Well let’s get on with the fishing report for this past week.

WEATHER:
The forecast for Cabo San Lucas in the coming week is predicting the average daytime maximum temperature will be around 28°C, with a high for the week of 31°C expected on the afternoon of Tuesday 11th. The average minimum temperature will be 18°C, dipping to its lowest on the morning of Saturday 15th at 15°C. Expect the coming week to remain predominantly dry. On the whole winds are likely to be moderate.

Mexican Baked White Fish in Cilantro Sauce
"This mixture of orange juice, soy sauce, and garlic gives this marinade a wonderful taste."

INGREDIENTS

- 1 large bunch of cilantro
- 1 small onion
- 3 cloves of fresh garlic
- 3 tablespoons of real butter
- 2 cups (1/2 liter) of Mexican crema or sour cream
- 2 teaspoons salt
- 4 tablespoons freshly-squeezed Mexican lime juice
- 2 1/2 pounds (a little over 1 kilo) whitefish filets (tilapia, grouper, sole, swai, etc.)

DIRECTIONS

1. Turn your oven on to 375F / 190C so that it can preheat while you are preparing the ingredients.

2. Wash the cilantro; chop off and discard the roots. Shake cilantro vigorously (or run it through a salad spinner) to eliminate as much water as possible. Chop it, both stems and leaves together. Set aside some whole leaves to use as a garnish on the finished dish, if you like. Chop the onion and garlic. Dice a little of the onion, if you wish, and place it with the reserved cilantro for garnish.

3. Melt the butter in a medium-sized skillet. Sauté the chopped onion and garlic in the butter for about 5 minutes, stirring often, until the onion is translucent, but not browned.

4. Place the sautéed onions and garlic, the cream, the salt, the lime juice, and the chopped cilantro into a blender. Process until you have a soft green sauce.

5. Lightly grease a glass or metal baking dish. Place the white fish fillets in the dish in a single layer. Pour the sauce over the filets. Move each filet slightly so that some of the sauce gets in under the fish, between the filet and the baking dish. Bake, uncovered, for about 25 minutes. Baking time will vary according to the thickness of the filets; watch your dish closely so that the fish does not overcook. Fish is done when it can be easily flaked with a fork.

6. Take your delicious fish in cilantro sauce out of the oven and use a spatula to dish it on to individual plates. Adorn each serving with a little of the reserved cilantro and onion, if you like. Serve your fish with white or red rice or boiled potatoes.


JC'S Cosmopolitan
The cosmo became almost ubiquitous in the '90s thanks to the TV show Sex and the City, but this spin on the martini remains just as tasty today as when Carrie Bradshaw made it famous.

INGREDIENTS
- 1.5 oz citrus vodka
- 1 oz Cointreau
- .5 oz lime juice
- .25 oz cranberry juice

INSTRUCTIONS

Build all ingredients in a shaker tine with ice and shake. Strain into a martini glass and garnish with lime wheel or zest.


BEWARE: Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs? You don't want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license. These are just a few things to consider when booking your charter boat. We will be talking more about this in the next weeks fishing report.
