filleting takes a little work with them smaller trout but if u just get the whole fillet and pin bones still in the fillet. I just cut a small strip on both sides along them bones and just discard it you still have a good fillet doing it that way instead of pulling them out individually. On them bigger fish You can see them bones much easier and you dont have to lose as much meat when you cut out them pin bones.
And I always have two fillet knives when I fillet. one for all the cutting off the fish and one only for getting the meat off the skin. Gotta keep that one sharp.
