Carne Asada Made Simple

[size 1]1lb flank steak, butterflied thinly.

1 medium white or red onion. ( red is slightly sweeter)

1 1/2 tablespoons of season salt. (I prefer Lawrys but Schilling or McCormick will also do)

1 medium bell pepper

1 large lemon or 4 tablespoons of lemon juice.


Place the meat in a leakproof container. Cut the onions into thin slices a well as the bell pepper. Lay them on top of the meat and sprinkle the season salt. Then squeeze the lemon juice on to this mixture.

Allow to marinade for about 1/2 hour. After that time rub the onions and green peppers on all sides of the meat.

Lay meat on barbeque and cook to your liking. This particular cut of meat requires more cooking time for tenderizing properly.

Towards the end of the cooking cycle, lay the onions and green peppers on the meat and cook for the final 2 to 3 minutes of cooking time.

The bell peppers and onions can be omitted by those with gastric problems. The amount of salt can be reduced or substituted with imitations salt or salt substitute for those whom are on a sodium restricted diet. [/size]
