Fillet Knife Question

After reading Tubedude's post on filleting perch, I have a question. I don't own an electric knife and I would like to know how long a knife edge holds up. The skin on perch knocks the edge off of my knife after about 5 perch. I will run the knife over a stone to get the edge back, but after about 5 more perch, the edge is gone again. Is this normal? I have two different knives with one being a Fiskars that is very thin. It is hard to put an edge on it because it bends when I run it over the stone.
I guess that I might have to break down and buy an electric knife, but what did everyone do before the electrics were available? DKS

After working a knife over a med. oiled arkansas stone I use a set of ceramic sticks mounted in a block like a V. That puts the best edge I have found to any knife. I only use the stone when the edge is really gone and for quick tune ups while you work 10 secs on the sticks will throw the edge back on.[sly] I have tried several other sharpening gadgets but that system has worked the best for me.

Since Santa brought me a cordless american a few years ago I don't use a regular fillet knife anymore - a good electric is well worth the money. It is safer and faster.

From my limited experience an electric knife edge will last a long time if trout, whitefish and small sized panfish are the primary fish its used on. I have had good success with a Black and Decker (I used it for over two years and the switch wore out before the blades lost an edge - it was around $16 at Wal Mart - it was used on more fish then I can count). I now have a General Electric ($20 came with a case and other odds and ends - when I needed a new one Wal Mart didn't have any of the Black and Deckers on the shelf) I've been using the GE for close to a year now and the edge seems to be as sharp as it ever was. Its cleaned in just the past three weekends several limits of perch and a few limits of trout not too mention the fish its done the prior 10 months.
It takes a few fish to get use to it, but once you start using an electric knife you'll wonder why you didn't use one before.
