Might have an opportunity during upcoming Christmas Holidays to go down to Naples, FL.
While down there, would also like to fly-fish from shore.

While I have been to Florida several times I was as far south as you are going. I know the weather in the north eastern corner of the state (Pensacola) can be cold and windy and the water temperature is not much better.
You may want to ask your questions on the [url "http://www.bigfishtackle.com/cgi-bin/gforum/gforum.cgi?forum=21"]general Florida forum[/url] and see if they can answer them for you.

I'm from New England and go down to Naples for the winter. Personally, I dont think you'll need any gear for how cold the water will be. I would suggest being careful of jelly fish that time of year. If you can find a lift out to some sand dunes or beaches around 10,000 islands its perfect to fly fish. I would try staying close to land because sharks tend to gather in those areas. A great spot to fly fish from.land is Tiger Tail beach on Marco Island. You can park there cheaply for the day. When arriving you'll have to walk through a little inlet and get to a fairly seccluded beach. I have caught many a snook and red fish off that beach. I'm not sure how Florida licenses work anymore. I remember that on state land or beaches you didn't need a license but it was sketchy as were you did need one. Just go to local tackle shop and ask them but an out of state license is really cheap.
