Cajun Halibut
1 1/2 lbs. Pacific halibut steaks
1 cup finely chopped pecans
3 T. flour
1/2 tsp. salt
1/4 tsp. pepper
2 T. maple syrup
4 T. salad oil
Pat halibut dry with paper towel. Mix together pecans, flour, salt and pepper on flat plate. With pastry brush, coat one side of each halibut steak with maple syrup. Dredge in pecan mixture. Repeat procedure to coat other side. Heat 2 tablespoons oil in skillet. Fry halibut at high heat for 10 minutes per inch thickness, turning once halfway through cooking. Add more oil to pan if necessary.
