Cedar Plank Salmon

1/4 cup olive oil

1 lemon or orange, juice and zest

1 T. chopped fresh basil

1/2 tsp. salt

1 tsp. freshly ground black pepper

1 salmon fillet

Combine all ingredients, except for salmon. Marinate salmon in mixture. Soak piece of untreated cedar plank in cold water for 2 hours (weighting it with something heavy). Bake plank in 450 degree oven for 5 - 10 minutes. Remove salmon from marinade. Bake on plank until cooked, allowing 10 minutes per inch thickness of fish.
