Got into some wild Roos this morning, then swung out to the slough and filled the swan tag this evening. Nothing fast and furious, but a unique mixed bag.

I've tried pheasant, but never swan. Does it taste like chicken? Bet she's got some big breasts! I'll be smoking another turkey in a few days. Enjoy, congrats

Tastes identical to bison, with a hint of beef. Delicious stuff, a little tough & stringey, but smoked it is incomparable and superior to beef.

They are quite tasty. We polished it off on Sunday eve. Surprisingly little meat for such a big bird.
The dog trailer is one of my friends. I don't guide, just hunt a lot, but I only have one dog, so having a trailer would not be very productive for me. I've got a video of the swan retrieve I may try to post later. [signature]
