Actually you never want your Kokes floating in ice water. The meat will go soft almost as fast as leaving them out of the cooler. Take a bucket of water and cut the gills and let them bleed out for a couple of minutes. Then place your fish in a plastic bag before adding them to an iced cooler. Keeping them dry and cool is the ticket to great meat!
